Chocolate orange cake

Ingredients

Dry Wet
10oz (280grams) Self-rising flour 8 fluid ounces (236ml) water
2oz (55 grams) cocoa powder 4 fluid ounces (118ml) vegetable oil
2oz (55 grams) coca powder 3 eggs
8oz (225 grams) caster Sugar 1 tea spoon of orange flavouring (optional)
1 tea spoon of baking powder  

 

 

Filling

Orange Curd

Mix all dry ingredients in a bowl

Mix all wet ingredients in jug (tip; put oil 1st the top up with water so that level on jug show 12oz then and eggs and flavouring)

Now pour wet into dry and mix to a thick batter

Pour into two 7-inch cake trays and bake for 25-30 minutes at 170 Celsius (325 Fahrenheit 3 gas mark)

Knife test, when it comes out clean remove from oven

Remove from oven and cool on rack use orange curd for filling and dust with icing sugar

Tips

Make with a electric mixer or food processor

You can change the flavour by changing the cocoa powder for more flour or for ground almonds.

You could add chocolate chips to and pour into 12 large muffin cases.
